Responsibilities:
- Learn manual techniques and handle machinery for chocolate production
- Conduct cacao quality testing and product quality testing
- Participate in on-the-job palate training and study the science of craft chocolate
- Prepare inclusions and garnishes manually
- Produce chocolate couverture and temper large batches of chocolate
- Create chocolate bars and bon-bons, and assist in cake, pastry, and sourdough bread baking
